Roasted broccolini and multi grain salad with crumbled feta


  • 2 bunches broccolini
  • ½ cup currants
  • ½ cup slivered almonds
  • ½ cup seed mix (sesame, chia, pepita, sunflower seeds)
  • ½ cup pine nuts
  • 100g feta, crumbled


  •  Preheat oven to 180C. Roast the seed mix and the slivered almonds for 10 minutes or until toasted. Meanwhile, trim the ends off the broccolini and then cut into two or three pieces (depending on how long your broccolini is). Drizzle with olive oil and roast for 5 minutes until bright green and still with a bit of crunch.
  • Toss the broccolini with the currants, almonds and seed mix. Sprinkle feta over the top.
