BBQ garlic prawns with avocado and mango dipping sauces


  • 15 extra large prawns
  • 1.5 tablespoons ground sumac
  • 1.5 tablespoons smoked paprika
  • 4 tablespoons garlic infused olive oil

Avocado dipping sauce

  • 1 avocado
  • 1 garlic clove
  • 2 teaspoons lime juice
  • 1 teaspoon mustard
  • ½ cup oil
  • 2 tablespoons sweet chilli sauce

Mango dipping sauce

  • 1 cup mango, diced
  • 2 cloves garlic, peeled
  • 1-2 tablespoons sugar (depending on how sweet the mangoes are)
  • ¼ cup water
  • 1 teaspoon chilli sauce
  • 1 tablespoon lime juice


Step 1 Preheat oven to 240C. Remove heads and peel prawns. Thread through wooden skewers (no need to soak these). Mix sumac and smoked paprika together and sprinkle this mix over the prawns and drizzle with olive oil. Roast for 5 minutes. Season with salt.
Step 2 To make avocado dipping sauce, blend the avocado, garlic, lime juice, mustard, oil and sweet chilli sauce together.
Step 3 To make the mango dipping sauce, simmer the mango, garlic, sugar, water, chilli sauce and lime juice until mango is soft. Puree using an immersion blender.
